  • 1. 2 teabags or 2g black tea
  • 2. 50g caster sugar
  • 3. 50g quick-cook tapioca balls (opt for those with a 5-minute cooking time)
  • 4. 1 tsp dark brown sugar
  • 5. Ice
  • 6. 200ml milk

Dark Brown Sugar Syrup:

50g dark brown sugar


Step 1: Brewing the Tea Commence the journey by infusing 2 teabags or 2g of black tea in 100ml of boiling water, allowing it to steep for 10-15 minutes. After discarding the teabags, set the tea aside to cool to room temperature. Meanwhile, create a clear sugar syrup by stirring 50g of caster sugar with 60ml of water in a saucepan over medium heat, bringing it to a boil. Remove from heat and let it cool.

Step 2: Preparing Tapioca Balls (Boba) Bring 500ml of water to a rolling boil in a saucepan. Add the tapioca balls, ensuring they are not sticking to the pan's sides. Boil for 2 minutes, then turn off the heat, leaving the pan covered for an additional 2 minutes. Drain the boba and cool them under running tap water. Mix with 1 tsp of dark brown sugar.

Step 3: Dark Brown Sugar Syrup In the same pan, heat 50g of dark brown sugar with 60ml of water. Stir until it boils, ensuring the sugar dissolves. Let it cool, allowing it to thicken. This syrup, making approximately 80ml, will keep in the fridge for up to a month. Coat the cooked boba thoroughly with the syrup.

Step 4: Assembling the Bubble Tea Place the sweetened boba in a 485ml drinking glass, creating a mesmerizing marble effect. Pour in the brewed tea, add 1 tbsp of clear sugar syrup, and include half a cup of ice. Stir gently to blend the syrup and tea without disturbing the marbling effect. Finish with 200ml of cold milk and serve with a boba straw.
